We set up a dedicated server and always run in to the issue that we become unable to pickup anyting after moving 5 or so chunks away from the spawn point. Stamina also stop to matter at that point , as in it neither decreases nor increases at that point. Same with hp, i typed the destroy me command and my hp went to 0 but i didnt die and still could move around. The server is hosted on nitrado.
This sounds much like a sync issue? Did you notice other issues (rubberbanding in movement when observing other players or NPC?) sadly there isnt any issue like rubberbanding. By now we requestet a change at hardware but it didnt help either.
