The closest official docs are what you find in the F1 PDA and float text / contextual help throughout the interface. There is a wiki as well. Changes that make it in from release to release can be found in the release notes off the main page in this forum. I've found the "let's play" vids by @spanj and others over on youtube to be fun and show "how to" stuff I never noticed. There are also threads here like the "10 things I wish I'd known" one that give you useful info like "if you leave survival bars in your suit constructor it acts like a fridge at the cost of one of the two output slots."
The wiki is out of date and Spanj mostly plays a custom scenario not representative of the base game. The in-game PDA is your best bet for general info. If you have any specific questions, you can make a thread about it, or check out the official discord (where questions are usually answered more swiftly. )
