So one of the things that have bothered me for awhile was when you capture an alien base and start dismantling the alien turrets you get a cannon turret, regardless which. Is there a way to modify what is dropped when you dismantle an item?

There is no way, its all handled by the default game code.

I have to admit, I would prefer to get resources from some things than have them in my inventory. I already have enough blocks, steel plate and hardened steel to build an entirely new planet, I'd rather have Iron and Sathium ingots from those blocks rather than the components or whole blocks when I dismantle them. The same goes for the guns and other items I dismantle. I already have the disassemble option to get the whole blocks and components.

Either that, or the ability to put them in the forge to be reduced to their component ingots.

I know I can just throw them in the factory to count toward the resources for a CV or whatever but, there are times when I want to dump a load of Sathium in there while the Iron could be used for other things. As it is, I can end up with far more iron than I need for the CV because the hardened steel contains both Sathuim and Iron.

Just switch your multi tool to give components instead of dissassemble into whole blocks. If you're worried about wanting resources to put into your factory, you can just put entire blocks or other items into the factory to pay the costs. This also decreases the time required to craft said blueprints

I have several "Blueprints" which are nothing but 'get stuff out of the factory' items. The most common being various steel blocks.
